Chicken Wing Cravings…

buffalo chicken meatiesWe are a BIG FAN of hot and spicy over here as you already know, and Nick always has a cravings for buffalo wings these days. Last night we took this craving and turned it into a healthier version of wings, choosing to make some buffalo chicken meatballs! Not gonna lie, we may have used an entire tub of frank’s red hot in the end, which in hindsight isn’t the healthiest, but you can certainly get away with using less. We just love a KICK. We paired the meatballs with a simple side salad and olive oil based garlic potato mashers underneath. It was DELICIOUS. These would be great alternative to wings, to serve at a football party with blue cheese dipping sauce.

Buffalo Chicken Meatballs: serves 3

Ingredients:

For the meatball mix:

  • 1 lb of ground chicken
  • 1 yellow onion; grated
  • 2 cloves of garlic; chopped finely
  • 1 egg
  • 1 cup of bread crumbs (or panko crumbs)
  • 2 tbsp of franks red hot sauce
  • 1 tbsp of salt
  • generous pinches of dried dill, oregano, and pepper

For the frying pan after baking meatballs:

  • 1/2 cup of franks red hot sauce (for the saute pan at the end)
  • 1/2 cup of crush red tomatoes (for the saute pan at the end)
  • 1/2 cup of franks red hot sauce (for the saute pan at the end)
  • 1/2 cup of crush red tomatoes (for the saute pan at the end)

Instructions:

  1. Pre-heat oven to 350F.
  2. In a mixing bowl combine all of the ingredients above.
  3. Mix with you hands lightly, or else it gets too mushy.
    • If it looks too watery, add more breadcrumbs
  4. Roll into golf ball sized meatballs and place on baking tray
  5. Place in oven for 30 minutes
  6. On medium heat, simmer on a frying pan a half/half ratio of franks red sauce and crushed tomatoes.
  7. Add meatballs to the frying pan for about 15-20 minutes, turning every five minutes so they are coated. Feel free to turn simmer down to low for this part.
