Spiralizing Through The Weekend…

And another weekend comes to an end….sigh. We were ALL over the map this weekend. From downtown to Brooklyn to the Upper East Side, you name it! All the while, this official 10 month old was trying to sprint everywhere. She is walking, falling, and laughing non-stop and on repeat; it’s GLORIOUS. Which brings us to today’s recipe, which reflects our current mood: TIRED. That calls for some shortcuts in the kitchen, using our good old friend the spiralizer and ground meat. Again, the spiralizer is awesome because you can prep early in the am in about 10 seconds, and pull out for prepped ingredients hours later. We kept this zucchini based dish light, with ground chicken (you could also use turkey), tomato chunks, light feta, and heavy spice.

Spiralized Zucchini bowl with Ground Chicken, Feta, and Tomato:

Ingredients: serves 2-3 (*keep in mind, the noodles shrink up when you cook them, so don’t go light on the noodles if you are serving a larger group)

  • 1 lb of ground chicken
  • 1/2 cup of feta (or less if you want to be healthier)
  • 1 can of diced tomatoes (15 oz)
  • 2 large zucchinis; spiralized
  • 1/2 yellow onion; chopped
  • 1 table spoon of salt, pepper, dill, chili peppers, dried oregano, dried basil
  • 3 garlic cloves; chopped
  • 1/2 cup of olive oil (used throughout)


  1. Add ground chicken, spices, and 1 tbsp of olive oil to frying pan. Cook over medium-high heat until chicken is browned, ~10 mins. Remove from pan (you can use the bowl you’ll be serving everything in later.)
  2. Add 1 tbsp of olive oil and garlic to the same frying pan, sautee over medium-high heat, until onion is soft and slightly browned, ~4-5 mins. Add the diced tomatoes and cooked chicken back to the pan. Simmer everything over medium heat for ~5 mins. Remove from heat (again, you can use the serving bowl.)
  3. Add 1 tbsp of olive oil, spiralized zucchini, and a generous dash of salt & pepper to the frying pan. Sautee over medium-high heat until zucchini is just starting to get soft ~2-3 mins (it should have a similar texture to pasta cooked al dente.) Return the sauce to the pan, cook everything over high heat for 2-3 mins. Add feta right before serving (we added it once everything was already served… just like you’d add parm to a pasta dish.)
